Rendang by Lilik Indrayani

Bahan :
– 1 kg daging sapi dipotong potong sesuai selera.
– santan kental dari 3 butir kelapa tua ukuran besar.
– 3 batang serai geprek.
– 1 jempol laos geprek.
– 3 lembar daun salam kering.
– 5 lembar daun jeruk.
– 1 cm kayu manis utuhan.
– 2 biji cengkeh utuhan.
– 1 sendok teh munjung ketumbar, 1/4 butir pala, 1/4 sdt jinten, 1/4 sdt adas, keempat bahan disangrai sebentar lalu diblender kering.
– 1/2 sdt merica bubuk.
– garem secukupnya.
– kaldu bubuk secukupnya.
– gula merah secukupnya.

Bumbu halus :
– 1 ons bawang putih.
– 2 ons bawang merah.
– 2 cm jahe.
– 7 butir kemiri.
– 2 ons lombok merah besar.
– 1 ons lombok merah keriting.
– 2 batang serai ambil bagian paling mudanya aja.
– 1 jempol laos yang muda. Semua bahan dipotong potong lalu digoreng sampai layu tapi tidak gosong dan diblender.

Cara buat :

-Bumbu halus yang udah diblender dimasak diwajan sampe agak sat
-lalu masukkan santan kental, masukkan serai geprek, laos geprek, daun salam kering, daun jeruk segar, rempah rempah yang udah halus
-lalu masukkan dagingnya, aduk aduk beri garem sedikit dulu, kaldu bubuk, masak terus rendang sampai agak sat, aduk aduk supaya bagian bawah tidak gosong
-kalau sudah agak nyusut beri gula merah,aduk-aduk lagi masak sampai agak sat dan warna agak gelap.
