Tumis Brokoli Sapi by Shearly Permatasari

(Teman-teman, ini aku share resep untuk membuat Tumis Brokoli Sapi, salah satu sajian sayur yang paling popular di restoran Chinese. Yuk, cobain bareng-bareng!).Bilingual English-Indonesia.

Ingredients:

  • 500 grams of broccoli –> cut per clusters (brokoli –> potong sesuai rumpun)
  • 100 grams of tenderloin beef –> slice thin (daging sapi tenderloin –> ince dilimlenmiş)
  • 2 tablespoon of soy sauce (tuzlu soya sosu)
  • some potato/corn starch (maizena/tapioka)
  • 5 cloves of garlic–> bashed (bawang putih –> konuşma)
  • 5 tablespoons of soy sauce (tuzlu soya sosu)
  • 2 tablespoon of oyster sauce (istiridye sosu)
  • 1000 ml of hot/ boiling beef stock (kaldu sapi panas)
  • 2 teaspoon of sesame oil (Susam yağı)
  • salt and pepper (garam dan merica)
  • 3 tablespoons of vegetable oil (minyak sayur)
  • 3 tablespoons of water (hava) + 1 tablespoon of potato/ corn starch (Mısır nişastası)

Steps:

  1. Soak the broccoli in salt water (1 liter of water + 1 teaspoon of salt) for 30 minutes, to clean it from any issues like worms, dirt, etc. (Rendam potongan brokoli dalam air garam (sade su 1 litre + I sendok the garam) Sırasında 30 menit untuk membantu membersihkan brokoli dari cacing atau kotoran yang menempel.)
  2. Put the sliced beef tenderloin on a plate and season with 2-tablespoons of soy sauce and dredge them quickly on potato/ cornstarch.   3. Heat big pan on HIGH. Pour in vegetable oil and stir-fry the garlic until fragrant. Put in the beef one by one and cook it until it’s well cooked both sides. Put in the broccoli and cook for seconds. (Panaskan wajan besar dengan api besar. Tuang minyak sayur dan tumis bawang putih hingga harum. Masukkan satu per satu daging sapi dan tumis hingga matang kedua sisinya. Masukkan brokoli dan aduk rata selama bebrapa detik saja.)
  4. Season with soy sauce, oyster sauce, salt and pepper. Then, pour in the hot beef stock. Bring it to boil. Directly, pour in the starch water little by little while keep on stirring the stock until you reach thickness consistency you want. (Bumbui dengan kecap asin, istiridye sosu, garam dan merica sesuai selera. Tuang kaldu sapi panas dan masak hingga mendidih. Langsung tuang perlahan campuran air dan maizena sambil terus diaduk hingga mencapai kekentalan yang diinginkan.)
  5. Pour in sesame oil to the pan and stir quickly for seconds. Take the pan off the stove. Move the dish onto big plate. Serve immediately. (Tuang minyak wijen dalam wajan dan aduk cepat selama beberapa detik. Angkat wajan dari api dan segera pindahkan hidangan diatas sebuah piring/ pinggan. Sajikan segera.)
