Having Fun with BONITA’s Style
Today we’re hosting a joint upload event with the theme “BABKA.”
During a challenge on Bonita, we made this Babka. Unfortunately, we couldn’t submit it because we forgot to document the tutorial for making it. Alhamdulillah (Thank God), on the last day of the challenge, we were able to make Babka again.
This time, I’m submitting it to Bonita for the Posting Agreement, using the same model and recipe but with different photos.

Sourdough Chocolate Babka

Levain

  • 50g starter
  • 50g flour
  • 50g water
  • 25g sugar

This sweet levain gives the bread a mild sourness.

  1. Mix well
  2. Let it rest until it peaks
  3. 5-6 hours at 30°C

Dough

  • 260g bread flour
  • 1 egg
  • 40g sugar
  • 105g cold milk
  • 5g salt
  • 150g levain
  • 25g butter

Topping
200g Chocolate Filling
100g Choco Chips
20g sliced almonds

how to make Sourdough Chocolate Babka

  1. Mix everything except the butter until smooth
  2. Add the butter and knead until elastic
  3. Rounding
  4. Let it rest on a surface for about 10 minutes
  5. Flatten the dough, then spread the chocolate filling on top. Roll it up lengthwise.
  6. Cut into 3 pieces
  7. Braid with the chocolate part on top.
  8. Place it in a circular baking pan
  9. Cover with cling wrap
  10. Let the dough rest until it expands
  11. Brush with milk
  12. Sprinkle with choco chips and almonds
  13. Bake at 180°C for 30 minutes
  14. Until golden brown
  15. Brush with butter when it comes out of the oven.
